Our Story

 At Wiper and True we love one thing: beautiful beer. We first fell in love with brewing on the stove at home, surrounded by pots, pans and raw ingredients. Tinkering endlessly, we studied the ancient art of our vocation. Nomadically brewing around the country, we learned from fantastically generous, knowledgeable artisans, honing our craft along the way. Although we've come along way since our early days, all of our recipes today stem from the same original desire to create something beautiful and delicious. 

Today, we’ve outgrown our roots as nomadic brewers, and operate out of two production sites. The first, the original brewery that we built in St Werburghs, Bristol, is where we focus on barrel-aged and mixed fermentation beers. New challenges continually arise and are met by our talented team of resourceful brewers and packers, as we continue producing top notch beers. The St Werburghs brewery is also the site of our original taproom, where we serve the freshest beers from our own tanks, alongside a stellar lineup of guest beers, ciders and organic/biodynamic wines.
In July 2022 we opened a second, much larger new headquarters in Old Market, two minutes walk from Bristol's esteemed Trinity Centre. Our large-scale brewing operations now take place on a custom-designed, German-engineered brewkit, allowing us to more than double our beer production capacity whilst maintaining a laser-sharp focus on quality and refinement. 
Attached to the brewery is our beautiful, plant-filled taproom and beer garden, designed by the team behind inland surfing destination The Wave. The taproom is lucky to host a glorious permanent street food offering provided by Bristol legends Eatchu, plus an exceptional supporting cast of rotating pop-ups. In addition to beers brewed metres from your seat, we’ll be serving natural wines curated by Cave Bristol, locally made spirits from Psychopomp and Circumstance, and plenty of alcohol-free and soft drinks, too. 
We carefully planned the taproom to try and create a really accessible, inclusive space - for everyone. From day one we’ll be working to constantly improve on this, and we really welcome all feedback and suggestions.
