Wiper and True is an independent brewery based in St Werburghs, Bristol focusing on modern British beer. Founded in 2012, we are an established team with a passion for brewing. We focus on balancing science, process and creativity to produce extraordinary beer. We have ambition for constant refinement, sustainable growth and developing a great place to work for the entire team.

Our first and current Head Brewer is moving on to new ventures; Wiper and True is therefore looking to recruit an exceptional Head Brewer to join our team.

We are at an exciting phase of the business in terms of growth and development, and this role offers the opportunity to be at the heart of that.


The Role


The Head Brewer works in all areas of the brewery and reports to the Founder, Michael Wiper.

The Head Brewer’s role is broad: they are responsible and accountable for overseeing safety, quality, production, materials and staffing in the brewery. They are responsible for the entire production process, effectively leading the production team while also working closely with the sales and marketing team to make sure the production plan is agreed and accomplished. The Head Brewer ensures Wiper and True is always operating to exceptionally high standards in terms of beer quality and staff wellbeing.

The role involves the management of a team of Brewers, Brewing Assistants, and a Packaging Manager who leads a team of Packaging Operatives and Assistants. The Head Brewer will carry out regular and extensive training of the Production Team. All production team members are expected to abide by the HACCP pre-requisites and company policies that are systematically reviewed by the Head Brewer.

The Head Brewer will report on Key Performance Indicators (KPIs) to the Senior Management Team and Company Directors. KPIs include:

  • Brewing and packaging volume efficiencies and yields

  • No stock-outs

  • Quality parameter performance against targets

  • Management performance against targets and development plans

  • Key project parameters

Desired minimum qualifications

  • IBD Diploma level or equivalent

  • Undergraduate or postgraduate degree in Brewing Science or equivalent

  • At least five years of brewing experience

  • At least three years of senior management experience, overseeing production in a similar or related field

  • An excellent understanding of using spreadsheets and particular programmes for brewery functions
