All of these four beers were brewed at our Barrel Store, a second brewing site where we work with wild and non-cultivated yeasts, harnessing the power of nature to introduce complexity and intrigue to our beers. Whether you're a seasoned mixed-ferm lover or are new to the world of wild yeast, this case is a great way to explore the fabulous flavours that Brettanomyces can bring to a brew.
Hinterland is back! Brewed at our Barrel Store, Hinterland is a fiercely flavoursome IPA, that explodes with vibrant aromas of ripe pineapple and fresh, juicy oranges. Softer fruits then linger into a crisp, satisfying finish. Added layers of complexity emerge with time, the result of a careful blend of Brett and traditional brewer’s yeasts.
A mixed fermentation Pale Ale, Ghost Notes ripples into your glass with a light body and a juicy, hop-rich aroma laced with notes of refreshing citrus and pineapple. Added layers of complexity emerge with time, the result of a careful blend of cultivated and wild yeasts.
Narrow Sea is our very English take on a Belgian beer style. Brewed with a combination of traditional Yorkshire yeast and a British heritage Brettanomyces strain, along with native hops and malts, this light English Saison walks firmly on the dry side of life. Savour the alluring crisp aroma with subtle hints of orchard fruits and elderflower.
Brewed in collaboration with our friends at Deya, Plan D forms one half of a duo; a two-part study of the interactions between Deya’s house yeast and approach to hopping, combined with our own mixed fermentation techniques. This version uses the strain known colloquially as ‘Brett D’, selected by our brewers for its reputation of introducing a fruity cocktail of pineapple and red apple aromas. Over time as the beer ages (if you manage to save it), expect to see additional complexity emerge, introducing an assertive kick of that characteristic Brettanomyces funk.
