PORTER - FIRE PLOUGH
We sourced some of the most wonderful malt in the world from the Swedish Island of Gotland, smoked over birch wood that gives the beer a warmth. This is balanced with the spiciness of Rye malt and set off by the warm fruit and pine notes in the abundance of Simcoe hops we added. These ingredients come together to form something unique.

This beer is built on Maris Otter, with plenty of darker malts mixed in. Munich lends sweetness and Chocolate, Black and Brown malts add cocoa and toasted nuts. The celebrity here though is the smoked malt, sourced from Gotland in Denmark. This rare malt is smoked over birch wood, most other smoked malts will be smoked over beech wood. This adds a beautiful bonfire flavour which is unsubtle but welcome.
Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch.
We used Simcoe in this dark beer. This hop has a soft bittering which is complementary alongside the smoked malt. We love Simcoe for it's piney flavours, so much so that we made a single hopped beer out of it.
Fermented with S-05 yeast
This beer is bottle conditioned. This means that instead of filtering all the yeast out of the beer and injecting CO2 to make it fizz, we keep the yeast in and let the beer go through a secondary fermentation in the bottle. It's the same process Champagne makers use. It creates its own natural carbon dioxide resulting in a light fizz that we think is a more refined texture and mouthfeel. The beer is alive. It is unfiltered, un-fined and unpasteurized.
The process does leave some yeast sediment in the bottom, so pour in one smooth motion if you want to leave it in the bottle.

Store upright in a cool dark place. It is ready to drink now but will also improve with age.
We use the finest ingredients possible and avoid any unnecessary chemicals or processing aids. We do not pasteurize, filter or clear our beers with synthesised chemicals. The result is that they don’t always have perfect clarity, but we feel this is a sacrifice worth making for keeping anything unnatural out of our beer.
