We brew a series of beers that use only one hop instead of a blend. Our second adventure is with what has long been a firm favourite at Wiper and True – Simcoe. Simcoe is rich with fruit flavours, from bright citrus notes to berries, plums and passion fruit, all tied together by its famous resinous pine like qualities. It has the complexity and subtlety that made us fall in love with this hop and want to showcase it on it’s own.


This beer is naturally fermented in the bottle, producing a yeast sediment at the bottom. Store upright and pour gently if you want to leave it where it is.

We like to keep our Pale Ale malt bill nice and simple. This is mostly Maris Otter Pale Ale malt with just a hint of CaraMalt and Torrified Wheat lend a beautiful fluffy head.

Our Malt comes from Warminster Maltings, a traditional Victorian floor malt house just down the road in Wiltshire. They produce the finest malts available and are a thoroughly nice bunch. 


This beer is a showcase for the US hop Simcoe.  Usually rife in India Pale Ales, it adds aromas of peach and flavours of warm stone fruit to this single hop pale ale. Bred in the heart of hop country by Yakima Chief Ranches in the famous American Yakima hop valleys, Simcoe is incredibly versatile across aroma, flavour and bittering. Intense pine and woody aromas add to the fresh fruit notes of this showcase for a beautifully complex hop.


Fermented with Safale S-05 yeast


This beer is bottle conditioned. This means that instead of filtering all the  yeast out of the beer and injecting CO2 to make it fizz, we keep the yeast in and let the beer go through a secondary fermentation in the bottle. It's the same process Champagne  makers use. It creates it’s own natural carbon dioxide resulting in a light fizz that we think is a more refined texture and mouthfeel. The beer is alive. It is unfiltered, un-fined and unpasteurized. 

The process does leave some yeast sediment in the bottom, so pour in one smooth motion if you want to leave it in the bottle.

Store upright in a cool dark place. The freshness of the hops is the key to this beer so drink it fresh and do not age. 


We use the finest ingredients possible and avoid any unnecessary chemicals or processing aids. We do not pasteurize, filter or clear our beers with synthesised chemicals. The result is that they don’t always have perfect clarity, but we feel this is a sacrifice worth making for keeping anything unnatural out of our beer.
